High caffeine blend of coffee from Mexico, the roast type used for this blend is a Dark Roast.
This is a robusta-grade coffee from small producers in Chiapas, one of Mexico’s leading coffee regions due to its rich volcanic soil and diverse microclimates. This coffee is grown at altitudes ranging from 1,000 to 1,250 meters. Washed, also known as “Wet Process,” which means ripe cherries are de-pulped to remove the outer skin, then fermented for 12-18 hours depending on ambient conditions, after which it is fully washed with clean water in a grading channel to store and move the remaining mucilage. The parchment is raked and turned periodically on patios to ensure a consistent drying process until the optimum moisture content of 12% has been reached to complete the process.

This washed-process coffee (also known as wet process) begins with de-pulped ripe cherries that ferment for 12–18 hours. After fermentation, they are fully washed in clean water and laid out on patios, where they are raked and turned until reaching the ideal 12% moisture content.
