From the northern highlands of Madriz, Nicaragua, this Certified Organic coffee is cultivated at 1,200 meters by 18 dedicated smallholder farmers working with Popoyo. Supported by Cosecha, the farmers practice dynamic agroforestry to protect biodiversity while enhancing cup quality.
This lot highlights Arabica varieties including Caturra, Catimor, and Parainema. The high-altitude conditions (SHG – Strictly High Grown) encourage slow cherry development, producing dense beans with exceptional sweetness and structure. Further refined through EP (European Preparation) sorting, only the best beans make it into this offering.
Expect a clean, crisp profile with vibrant citrus, delicate florals, and layered notes of black tea and stone fruit — a true expression of Nicaraguan terroir.
